Eric Skokan owns and operates Black Cat, the largest full-scale farm and restaurant operation in the US, with his wife Jill. They run two award-winning Boulder restaurants, Black Cat Farm-Table-Bistro and Bramble and Hare where Eric is also the chef, and the 425-acre certified organic and bio-dynamic Black Cat farm with more than 300 sheep,120 pigs, and 250 vegetable and grain varieties.
