Nathan Hodge, author of “The Art and Craft of Chocolate,” is the co-founder and Head Chocolate Maker of Raaka Chocolate, a bean-to-bar chocolate company located in Brooklyn, New York. Unlike most craft chocolate companies, Raaka Chocolate works with unroasted beans to create chocolate that tastes brighter, fruitier, livelier, and more acidic than the chocolate to which we are accustomed.
